Ever try Kale? It’s a Super Food!

POWER KALE SALAD

If you’re like me, most of you will look at the name of this salad at first and say, “no thanks.” Yes, it’s called Power Kale Salad. Don’t be scared, kale doesn’t taste that bad and it’s so good for you. Kale is a, “super food.” It’s low in calories, has no fat and it’s high in fiber and iron. It helps keep me going when it comes to activities like running.

This salad also has Brussels sprouts. This is another vegetable many of us have a hard time eating raw or cooked. In this case, they are raw and shredded. Brussels sprouts are high in vitamin C and low in cholesterol. Local nutritionist Sara Sullivan gave me this recipe. You can find more delicious dishes on her website sarasullivan.com.

This salad is good, but this recipe is all about the dressing. Tangy Tahini Dressing is delicious! I could seriously drink it out of the container. Give it a try no matter what kind of salad you’re having. If you haven’t tried kale, eat it in a salad with this dressing. You won’t be disappointed. Enjoy this healthy salad and as always, that vegan thing.

Ingredients for Salad

1-2 bunches of Kale (washed and chopped with stems discarded)
1 zucchini shredded or chopped
3 carrots shredded or chopped
1 medium red onion, diced
Shredded Brussels sprouts
Sunflower seeds
Pumpkin seeds
Cranberries

Ingredients for Tangy Tahini Dressing

2 ½ tabs creamy tahini
2 tabs apple cider vinegar
3 tabs lemon juice
3 tsp agave syrup
1 ½ tbs olive oil
