BBQ TEMPEH SANDWICHES
This recipe is dear to my heart. It is the first dish we made when my wife and I decided to go vegan.
One of our favorite meals when we ate meat were pulled pork sandwiches. Just because we don’t eat meat any more doesn’t mean we can’t enjoy something just like it.
This is a simple recipe, tastes great and is very healthy. Instead of pork, you use tempeh. It is made from cooked and slightly fermented soybeans. You can find it in the produce section of your grocery store. Tempeh is high in protein.
The recipe also has onions and peppers which are very good for you.
A Barbecue tempeh sandwich is the perfect way to introduce a vegan diet to someone and it’s also a great recipe if you’re in a hurry. It only takes about a half hour to prepare and cook. Enjoy the pulled pork without the pork and of course, that vegan thing.
1 cup barbecue sauce, your choice
1 (8 ounce) package tempeh, crumbled
1 tablespoon vegetable oil
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
1 medium onion, chopped
4 hamburger buns toasted or broiled with vegan butter (we used Earth Balance)
Pour the barbecue sauce into a medium bowl.
Crumble the tempeh into the sauce, and let it marinate for 10 minutes.
Heat oil in a skillet over medium heat. Add the red and green peppers and the onion.
Cook, stirring frequently until tender.
Stir in the tempeh and barbecue sauce, and heat through. Spoon the tempeh mixture onto rolls and serve.
Serves 4 to 6, depending on how much you put on the rolls.
