Chickpeas in a Dessert? Check out this Healthy Treat!

CHOCOLATE CHIP CHICKPEA BLONDIES WITH SEA SALT

Dessert! Did I get your attention? If you are looking for a sweet treat that doesn’t have all the sugar or processed stuff, then check out this recipe from Ambitious Kitchen.

Instead of sugar, you use maple syrup to sweeten it up. There is no flour in the recipe either, so it is gluten free.

This recipe isn’t horrible for you. The chickpeas are high in protein and iron. Legumes are also great to prevent disease and optimize your health.

The blondies are vegan, so there are no eggs or dairy. Just make sure you buy chocolate chips that have no milk in them. We like to buy the chips from Trader Joe’s.

To say the dessert is delicious would be an understatement. Everyone in our family and I do mean all 7, loved the blondies. Do yourself favor, make at least a double batch.

Ingredients

Cooking spray

2 cans chickpeas

1 cup all natural peanut butter

2/3 cup pure maple syrup

4 tsp vanilla

1/2 tsp baking powder

1/2 tsp baking soda

2/3 cup non-dairy semi-sweet chocolate chips

1/4 cup non-dairy semi-sweet chocolate chips for topping

sea salt

Directions

Preheat oven to 350 degrees and spray 9 x 13 inch pan with nonstick cooking spray. In a food processor or blender, add all ingredients except chocolate chips and process until batter is smooth. Stir in 2/3 cup chocolate chips. Spread batter evenly in prepared pan and then sprinkle and lightly press 1/4 cup chocolate chips on top. Bake for 25 minutes or until toothpick comes out clean and edges are starting to brown. Cool at least 20 minutes. Sprinkle with sea salt and then cut into squares.
