When I was first offered a brownie with avocados, I thought it was a joke. Come on, really? Well, the dessert was not a joke, but a delicious treat. It was so delicious, I ended up eating three. I know, what a pig right? I couldn’t help myself.
What makes them vegan is the fact you don’t use cow’s milk. We like to use almond milk in this recipe. It’s low in calories and high in protein. Almond milk also has lots of vitamins and great cholesterol lowering effects. The best thing of all though, it tastes great.
The ingredient that really sets this apart is the avocado. You use an avocado instead of vegetable oil or eggs. Avocados are very healthy for you. They have lots of protein and are high in vitamin E and C.
The recipe I found on www.about.com, in the dairy free cooking section, is pretty simple. There are only 9 ingredients and most of them you probably already find in our cupboard or fridge. Bottom line is, you don’t have to be a pastry chef to make Avocado Brownies. My kids can make these on their own, but I have to be careful. They love them so much, they may eat them all before I can get my hands on one. Enjoy eating eating this dessert with a twist and that vegan thing.
2 cups flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
1 tsp baking powder
1 tsp salt
1 cup mashed avocado
1/2 cup almond milk (or any other non-dairy milk)
1/3 cup water
1 tsp vanilla extract
Preheat oven to 350 degrees. Lightly grease a 9×13 baking dish. Set aside. In a medium-sized mixing bowl, sift together the flour, sugar, cocoa powder, and salt until well combined. Set aside. In a large mixing bowl, beat together the mashed avocado, almond milk, water and vanilla extract. Add the dry ingredients, mixing until combined. Pour into prepared baking dish and bake for 30-35 minutes. Allow brownies to cool completely in the pan. Cut the brownies into squares and serve.
