How about breakfast burritos without eggs, cheese and meat?

“Tofu Breakfast Burritos”

Ever want to try a breakfast burrito without eggs, cheese and meat? A lot of you would probably say, no thanks! Well, I am here to tell you I have a recipe you will love that does not include animal products.

We love breakfast burritos, especially as breakfast for dinner. Instead of sausage, bacon or ham, you use tofu as your protein. Just in case you didn’t know, tofu is made from mashed soybeans and formed into blocks that you can buy in the produce section of your favorite grocery store. Besides being high in protein, tofu is also high in calcium and helps fight cardiovascular disease.

This recipe, like others I’ve featured in this blog feature something called nutritional yeast. It adds flavor to your tofu to give it a taste like eggs.

Besides the tofu, we also add potatoes and other vegetables. The best part though is throwing in your favorite salsa.

This recipe it really a mix of several others, including one from Food52.com and and some experimenting a bit by us.

This has turned into a family favorite. Give it a try, you won’t miss the eggs, meat or cheese at all, but you will enjoy that vegan thing.

Ingredients

1 tablespoon olive oil
1 clove garlic, minced
some diced vegetables (We like to use baby spinach, onions and some red peppers)
1 14- to 16-ounce block of extra-firm tofu
2 tablespoons tahini
1 tablespoon low-sodium tamari
1 tablespoon Dijon mustard
1/2 teaspoon turmeric
1/4 cup nutritional yeast
1 package of your favorite wraps
2 cans of potatoes
Salt and pepper to taste.

Directions

Heat a large skillet over medium heat. Add the oil and sauté some onion until it’s soft and cooked through. Add the garlic and cook for two minutes. Add your vegetables of choice, except the spinach and cook until they are tender. Cook the potatoes in another pan. While the vegetables cook, crumble the tofu with your hand in a separate bowl. Whisk together the tahini, tamari, mustard, and turmeric in a bowl. Add the tofu to the skillet, along with the tahini mixture. Mix the ingredients together and cook about 5 minutes. Add the nutritional yeast and mix it in. Then add the spinach and cook until it’s just wilted. Grab your favorite wrap, add the tofu and vegetables, potatoes and salsa and serve.
